From a small-scale distillery in a historic bakehouse in the Far South of Tasmania, we strive to capture the spirit of this untamed Island.Inspired by the fragrances and flavours from the surrounding ancient rainforest, we feature the evocative sassafras (Atherosperma moschatum), composed with other locally grown botanicals to produce a truly regional taste. By blending these ingredients with the finest quality mineral water sourced from the wild, we have created ‘evoke’, the world’s first sassafras spirit.The resulting drop is an original Tasmanian pre or post prandial spirit with a slightly bitter edge and a delicate composition of flavours, reflective of Tasmania’s wilderness.
